Laurette Wills' E-Z Low-Fat Sweet Potato Pie
Sweet potato pie need not be fattening or difficult to make. I think you'll enjoy this super easy low-calorie recipe (E-Z on the waistline, too!).
2 large sweet potatoes, cooked and mashed
1/2 cup skim milk
1/2 cup maple syrup
1 tsp vanilla
1/4 tsp nutmeg
2 eggs
Boil sweet potatoes until soft. Mash potatoes in a large-mixing bowl. Combine mashed sweet potatoes with eggs, syrup, vanilla, milk and nutmeg. Mix well. Spray 9-inch pie pan with non-fat cooking spray. Pour mixture into the prepared pan and bake at 350 degrees for 1 hour or until knife comes out clean. Serves 8.
Per serving (without pie crust): Calories 105, Fat 1.49 gms, Chol 46.8 mg, Sod 20.3 mg, Carb 20.8 gms, Sugars 16.1 gms, Pro 2.29 gms
Optional: Prepare in a low fat pie crust and top with low calorie whipped topping.

Kathy Bohannon's Creme de Menthe Brownies
Boxed brownie mix
2 Cups Confectioner's sugar
1 stick butter, softened
2 teaspoons of Crème de Menthe liqueur
6 oz semi-sweet chocolate chips
6 tbsp butter
Bake a boxed brownie mix according to directions. Set aside to cool. Mix confectioner's sugar with 1 stick of butter and the Crème de Menthe. Spread over cooled brownie mix. Melt butter and chocolate chips, cool until spreadable. Spread over top. Chill and cut into small squares. Optional: dust lightly with confectioner's sugar. Enjoy!
This is my favorite Christmas recipe because I'm not a great cook and these brownies make me look like I've been in the kitchen all day. I love to hear people say "mmmmm!" when they take their first taste. Makes me feel like maybe one day I should actually learn to cook!

Dori Drabek's Sticky Puddin' Buns
Joyful greetings during this most blessed Christmas season! Please enjoy some Sticky Puddin' Buns with your family . This is an easy recipe you can prepare the night before and pop into the oven first thing Christmas Day for a yummy breakfast before, during or after you open presents.
½ c. chopped pecans ( more if preferred)
18-20 small Bridgeford frozen rolls
1 3-ounce pkg. butterscotch pudding (the "cook" kind, not instant)
1 stick (1/2 cup) butter or margarine
½ c. brown sugar
Spray bundt pan with cooking spray (i.e., Pam). Cover bottom of pan with the pecans. Place frozen rolls on top of pecans. Sprinkle with dry pudding mix. Melt butter/margarine in separate pan, stir in brown sugar, mix well, and pour over the rolls. Spray a sheet of waxed paper with cooking spray and place it over the rolls. Let them stand overnight. Next morning, peel off waxed paper and bake at 350° for 20-25 minutes. Carefully invert on platter and serve warm. M-m-m-m-m-m-m!
Note: Albertson's is the only place in Southern California that sells the "cook" type Butterscotch pudding. Hopefully, it is available in other parts of the country as well.

Dawn Mooring's Heath Bar Candy
2 cups nuts, finely chopped
2 sticks butter
1-1/2 cups sugar
1 pkg milk chocolate morsels
Line a 9x13 pan with foil and spray with Pam. Sprinkle with 2 cups of finely chopped nuts. In a large heavy pot put in 2 sticks of real butter (not margarine), 1 and 1/2 cups of sugar. Boil until the mixture is the color of peanut butter, stirring constantly. I turn my jar of p. butter upside down beside the pot to match it. Pout quickly over the nuts. and tilt pan to cover the whole area. Sprinkle one pkg. of milk chocolate morsels and let set a few minutes til morsels are melted and spread over the candy. Cool until totally hardened. This takes a good while but can be done in fridge to speed it up. Break into pieces.
Everyone who eats this wants the recipe. It won my father-in-law's heart. To this day I don't know if he loves me or the candy more because 18 years later he still talks about.
Have a very Christ centered Christmas. J ust love on those who need it it the most even though they may deserve it the least. That's what God does for us!

Donna East's Delicious Dip
This is easy! A bar of cream cheese and a jar of Tostitos salsa (mild, medium or hot like me). Slowly melt together in a sauce pan. Serve with chips. Yummy! Makes a great snack. It's always a holiday party hit for me. Or any party for that matter.

Carole Graham's Fudge
Toast two cups of pecans on a jellyroll pan at 350 degrees until pecans become fragrant. Chop nuts finely. Melt I package of chocolate bark according to the instructions on the package/ Pour bard into a mixing bowl and quickly stir in the condensed milk. Stir in the nuts. Pour onto a jellyroll pan lined with was paper. Spread evenly. Allow to cool about thirty to forty minutes. Cut into squares and store in an airtight container.

Chewy Chocolate Chip Cookies
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, melted
1 cup packed brown sugar
1/2 cup white sugar
1 tablespoon vanilla extract
1 egg
1 egg yolk
2 cups semisweet chocolate chips
Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets or line with parchment paper. Sift together the flour, baking soda and salt; set aside. In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended. Beat in the vanilla, egg, and egg yolk until light and creamy. Mix in the sifted ingredients until just blended. Stir in the chocolate chips by hand using a wooden spoon. Drop cookie dough 1/4 cup at a time onto the prepared cookie sheets. Cookies should be about 3 inches apart. Bake for 15 to 17 minutes in the preheated oven, or until the edges are lightly toasted. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.

I like to get everyone involved in the kitchen on Christmas morning. Each family member can make their own French toast and dig in right away.
8 white bread slices (1 1/2-inches thick) white bread
8 oz. cream cheese, softened
1/2 cup strawberry jam
8 large eggs
2 cups milk
1 teaspoon ground cinnamon
1/2 cup butter
powdered sugar
maple syrup, optional
Using a small knife, carefully cut a pocket in bread slices with a 2 to 3 inch opening, leaving all sides intact. Spread 1 ounce of cream cheese in the pocket. Spread 1 tablespoon of jam on top of cream cheese. Repeat with remaining slices of bread. Whisk together eggs and milk. Add cinnamon. Dip bread slices in egg mixture, coating all sides. Heat butter in a large non-stick skillet. Cook each slice on medium low heat for 3 minutes per side or until browned. Sprinkle with powdered sugar and serve with maple syrup, if desired. Serves 8
Mark Fuller's Chocolate Oatmeal Cookies
2 Cups Sugar
4 Tablespoons Cocoa
1 teaspoon vanilla
½ cup milk (whole)
½ cup peanut butter (creamy)
1 stick butter or margarine
3 cups uncooked oatmeal (old fashioned not instant)
Mix together sugar, milk, butter and cocoa. Boil for 1 minute. Remove from heat and quickly add remaining ingredients. Drop with spoon onto wax paper. Let cool.
(I use a somewhat thick saucepan. Be careful and not use a thin one if you know what I mean.)

White Chocolate for baking
Melt the white chocolate (in microwave or stove). Put a small spoonful of peanut butter between 2 Ritz crackers. Dip each "cookie" into the white chocolate until it gets fully covered. Set out on wax paper to cool... make as many as you'd like!
Growing up, we had a neighbor who would always make these for our family for Christmas. They are my dad's favorite and usually he would eat them all! A few years ago, my parents moved since my sister and I are both married now. I learned how to make this simple recipe so that my dad can still have them every year. He still struggles to share them with anyone! Now my husband is crazy about them too, so it's a good thing they are so easy!

Rushan Smyth's Sausage Rice Casserole
1 lb roll sausage – (I use hot sausage) cooked and crumbled
1 pkg. chicken flavored Rice A Roni – cooked according to package directions
1 can sliced mushrooms or stems and pieces
1 medium onion chopped and sautéed in 1 T butter
2 cans cream of mushroom soup
1 cup shredded sharp cheese
Mix all ingredients; top with Italian bread crumbs or French fried onion rings and bake at 350 degrees 30-45 minutes or until bubbly. Optional: add ½ can milk to soup and/or 2 beaten eggs. This will make the casserole fluffy and light. Also, sliced water chestnuts add a little crunch.since there's usually no snow to "crunch" under our feet!
This is a personal family favorite at our house and a perfect dish to make ahead for Christmas Morning. Place it in the oven to bake while opening gifts and enjoying that second cup of coffee! Deliciously served with mixed fruit and hot rolls! MMMMMMMMmmm . Merry Christmas!!!

Rolo Candies
Small Pretzels
Pecan Halves
(1 Rolo + 1 Pretzel + 1 Pecan Halve = 1 Treat)
Preheat oven to 250 degrees and line a cookie sheet with foil. Place pretzels flat on the foil-lined cookie sheet. Place 1 Rolo on each pretzel. Place in oven for 4-5 minutes or until Rolos become soft. Immediately after removing pretzels from oven, place a pecan halve on each Rolo and very lightly press down to spread chocolate/caramel over pretzel. Let stand or place in refrigerator until chocolate/caramel hardens. Goodies will keep for a good while in an air tight container.

Buy one NY style cheesecake from the Publix deli
12 oz of white chocolate chips
various ground nuts, crushed peppermints, cocoa powder
Taking a melon baller, scoop cheesecake into 1 inch balls and place on a cookie sheet in freezer for at least 1 hour. Melt white chocolate chips in a double boiler. Dip cheesecake balls into melted white chocolate. Sprinkle or dip tops into toppings. Place on wax paper to harden
Return to fridge until ready to serve.

Erica Robinson's Banana Pudding
2 12-oz. boxes of vanilla wafers (I like to use even more!)
8 large bananas, sliced
1-1/2 cups sugar
3/4 cup all-purpose flour
6 egg yolks
3 whole eggs
1/2 cup butter
dash salt
6 cups milk
2 teaspoons vanilla
Layer sliced bananas and vanilla wafers in a large baking pan. Mix together sugar, flour, egg yolks and whole eggs, butter and salt in a heavy-bottomed saucepan. Add the milk, a little at a time. Cook slowly until the mixture thickens, about 20 minutes. Let mixture cool for a few minutes, then add vanilla. Pour over bananas and vanilla wafers.
Merinque topping
6 egg whites
1 teaspoon lemon juice
1 teaspoon sugar
1 teaspoon vanilla
Beat the egg whites with lemon juice, sugar and vanilla just until stiff. Spoon this mixture over the top of the pudding then brown at 350 degrees for 10 to 12 minutes or until golden on top.
My great grandmother always made this recipe and I enjoy carrying on the tradition for our family. I hope you will enjoy this "real" southern banana pudding (no instant mixes allowed!) and that it might become a tasty tradition for your family.

Stacy Robinson's Chocolate Pound Cake
3 cups sugar
1 cup butter, softened (unsalted butter; not margarine)
½ cup shortening
1 teaspoon vanilla
5 eggs
3 cups all-purpose flour
1/4 cup powdered cocoa
½ teaspoon baking powder
½ teaspoon salt
1 cup milk
Glaze:
1 cup powdered sugar
1 tablespoon cocoa
4 to 5 teaspoons hot water
Preheat oven to 350 degrees. Grease and flour 10" tube pan. Cream sugar, butter, shortening and vanilla – don't rush this step – take time to beat in lots of air until very light and fluffy. Add eggs one at a time, beating just until yellow disappears. Lightly spoon flour into measuring cup; level off (don't 'pack' flour). Combine flour, 1/4 cup cocoa, baking powder, and salt. Add flour mixture alternately with milk into creamed mixture, beginning and ending with flour mixture; scrape sides of bowl. Pour into prepared pan. Bake at 350 for 70-85 minutes or until toothpick inserted in center comes out clean. Cool 25 minutes then remove from pan and cool completely before glazing. In small bowl, combine glaze ingredients; spoon over top of cake, allowing some to run down sides.
This recipe is an old favorite - it's the first 'real' cake I made as a child after graduating from my Easy Bake Oven, and during the ten years that I designed wedding cakes it was my most-requested groom's cake recipe. Remember, a pound cake doesn't have to be baked in a tube pan – try this recipe in 9" layer pans or bake in a 10" x 15" pan to serve as a sheet cake or cut into squares to serve as chocolate petit fours.
